Step 1: Fill and purge
Fill the pitcher to just below the bottom of the spout — about a third to halfway. Milk expands as you add air, so leave room. Before you start, purge the wand (blast steam for a second) to clear out any condensed water so you’re adding steam, not watering down your milk.

Aim to cut the steam at 140–150°F. Without a thermometer: the pitcher becomes almost too hot to hold for more than a second or two — that’s your cue. Turn off the steam before you pull the pitcher away, then wipe and purge the wand immediately (dried milk on a wand is a nightmare).
Step 6: Groom the milk
Before pouring: swirl the pitcher hard to keep the foam integrated, and tap it on the counter to pop any stray large bubbles. Properly textured milk looks like glossy wet paint and moves as one silky mass. If you can see distinct bubbles, swirl more; if it’s separated with foam on top, you under-textured — you’ll know for next time.
