Here’s the number that reframes everything: a cup of brewed coffee is more than 98% water. You can buy a $1,500 espresso machine, a $400 grinder, and single-origin beans roasted last Tuesday — and then brew all of it with water that quietly wrecks the cup. Water is the largest ingredient in coffee by a massive margin, and it’s the one almost nobody tunes.

If your coffee tastes flat, dull, chalky, or sour no matter what you do with grind and ratio, your water is the first place to look, not the last.

Why water is the hidden variable

Coffee extraction is chemistry. Water is the solvent that pulls flavor compounds out of the grounds — acids, sugars, oils, aromatics. But water isn’t neutral. What’s already dissolved in it changes how it extracts:

  • Minerals (mostly magnesium and calcium) actively grab onto flavor compounds and pull them into solution. Some hardness is good — it’s what gives coffee body and sweetness.
  • Too much hardness over-extracts and leaves scale in your machine.
  • Too little (like distilled or heavy RO water with nothing added back) makes coffee taste hollow, flat, and lifeless — it literally can’t extract properly.
  • Chlorine and chloramine from municipal treatment mute aromatics and add off-flavors.
  • Alkalinity (buffering) neutralizes coffee’s natural acidity — too much and every coffee tastes dull and the same, robbed of the brightness that makes a good bean interesting.

The takeaway: the goal isn’t “pure” water. It’s balanced water. This is the single most misunderstood thing in home coffee.

The numbers that matter (SCA targets)

The Specialty Coffee Association publishes a water standard, and while you don’t need to hit it to the decimal, the targets tell you what “good coffee water” looks like:

The problem with just using tap water

Tap water is a wildcard. It’s different in every city, and it changes seasonally. Yours might be:

  • Too hard (scale city — the American Midwest and Southwest are notorious). Great for body, murder on your machine, and often high-alkalinity so everything tastes flat.
  • Too alkaline, dulling every coffee into sameness.
  • Chlorinated, muting aromatics.
  • Fine, actually — some municipal water is genuinely good for coffee. But you won’t know until you test.

That’s the honest answer to “should I worry about my water”: test first, then decide. Guessing is how people spend money solving a problem they don’t have — or ignore one that’s ruining every cup.

The two ways to fix bad coffee water

Once you know what’s in your water, there are two real paths:

1. Filter what’s there. A simple carbon filter (a pitcher, an inline filter, a whole-house carbon block) strips chlorine and some contaminants cheaply. If your water is close to good but chlorinated, this alone can be a big upgrade.

2. Start from zero and build the water you want. This is the serious-coffee approach: strip the water down with reverse osmosis (RO), then add back a controlled amount of the right minerals (remineralization). The result is consistent, ideal coffee water every single time, regardless of what your city does. It’s how cafés that care about water get repeatable results — and it’s the setup a lot of home coffee obsessives eventually land on.

RO with remineralization is the gold standard because it gives you control. You’re no longer at the mercy of your municipality — you’re brewing with water built to spec.
